Cantina Giardino "Paski" Coda di Volpe IGP 2021
A once-forgotten Campanian grape, revived by a couple determined to save it.
Grape Varietals & Region: 100% Coda di Volpe grown on volcanic soils in the Paestum IGP zone of Campania, southern Italy — one of several native varieties Cantina Giardino has worked to bring back from near-disappearance in the Irpinia hills.
Taste Profile: Bright and fresh, with a delicate balance of citrus and tropical fruit notes and a hint of minerality. A refreshing, easy-drinking wine that pairs well with seafood, light pasta dishes and salads.
Winemaking Process: Macerated on the skins and fermented spontaneously with wild yeasts; 30% is aged for two months in small chestnut barrels, the remaining 70% in stainless steel, before the blend is aged 12 months total. Low intervention, unfiltered, no added sulphites.
Winemaker: Antonio Di Gruttola and Daniela De Gruttola founded Cantina Giardino in 2003 in Irpinia, Campania, though Antonio had been experimenting with natural winemaking for five years before that. Having watched industrial farming strip the region of its old local vines, the couple set out to revive native varieties like Aglianico, Fiano, Greco and Coda di Volpe on volcanic-soil vineyards, fermenting only with indigenous yeasts and pressing by foot or with a wooden screw press to make wines that speak plainly of variety and place.

We hate the disappointment of opening an off-drinking bottle of wine – as much as a kid seeing their scoop of ice cream fall to the ground (Yes, it hurts).
Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
