These orange wines typically undergo extended skin maceration, allowing the grape skins, seeds, and sometimes stems to remain in contact with the juice for weeks or even months. They are often aged in traditional vessels such as amphorae, old oak, or other neutral containers that encourage gentle oxidative ageing rather than preserving primary fruit.
As a result, these wines develop complex, savoury characteristics: notes of toasted nuts, almond skin, hazelnut, honey, bruised apple, dried citrus peel, and sometimes tea or chamomile. The palate is structured and layered, with firm tannins, lower perceived acidity, and a long, earthy finish.
