Testalonga Bandits Kloof Daisy's Pond 2022

Grape Varietals & Region: 100% Grenache Blanc from Testalonga's own property, Bandits Kloof. They started planting vineyards in 2018 here, with Grenache Blanc & Grenache. Decomposed Sandstone and Koue Bokkeveld Shale

Winemaking Process: The grapes were whole bunch pressed directly into 2 x 400L old (10 year) French barrels. The wine took a long time (12 months) to complete full malo lactic fermentation, this we feel added another layer to the wine. the wine was left on its gross lees for 21 months, before being racked for the first time the day before bottling into tank. From there it went directly into bottle

Dry & Yeasty Whites

Open tank fermentation, lees stirring, pumping over and racking can all play a role during vinification, while oxidative aging in allows gradual air contact with the wine. Expect notes of yeasty umami notes, as well as almon, dried apricot & salinity
