Paşaeli Co-Ferment Old Vines Rosé 2025
Two old, half-forgotten Turkish red grapes, co-fermented together into a rosé that tastes like neither one alone.
Grape Varietals & Region: A co-ferment of Çalkarası and Karasakız — two indigenous Turkish red grapes from old vines, fermented together rather than blended after the fact, which is the whole point: co-fermentation lets the two varieties interact from the start, building a rosé with more complexity than a simple assemblage. Çalkarası hails from Denizli in southwestern Turkey, Karasakız from further north around the Aegean and Kaz Dağları — bringing the two together is a very Paşaeli move, true to the winery's mission of putting Turkey's native grapes back on the map.
Taste Profile: Expect the kind of savoury, structured rosé that doesn't taste like an afterthought — red berry fruit balanced against herbal, saline notes, with enough grip and acidity to stand up to food rather than just refresh alongside it. Good with grilled octopus, lamb kofte, or anything off the mangal.
Winemaking Process: Hand-harvested old vines, gently pressed and fermented together on native yeasts in stainless steel — Paşaeli almost always ferments spontaneously across the range, letting each site and vintage show through with minimal manipulation.
Winemaker: This is Seyit and Gino Karagözoğlu's winery through and through — a project built on resurrecting old, indigenous Turkish vines and trusting them to make interesting wine without much winemaker interference. Co-fermenting two different old-vine reds into a single rosé is exactly the kind of quietly experimental move that's made Paşaeli one of the most closely watched producers in the country's rapidly growing natural wine scene.

We hate the disappointment of opening an off-drinking bottle of wine – as much as a kid seeing their scoop of ice cream fall to the ground (Yes, it hurts).
Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
