Champagne Borgeois-Diaz Blanc de Noirs Extra Brut NV
Grape Varietals & Region: A cuvée of Pinot Meunier and Pinot Noir sourced from 7ha of vines averaging 35 years of age, rooted in clay-limestone soils. The use of herbicides, fungicides, and other chemical treatments is strictly forbidden, and native wild plants are allowed to intersperse among the rows to enhance microorganism diversity. Throughout the year, the biodynamic lunar calendar is meticulously observed, and all vineyard labor is conducted manually.
Taste Profile: Bourgeois-Diaz Blanc de Noirs Extra Brut is a sparkling wine sculpted with a robust bouquet of raspberry fruit, quince nuances, and hints of brioche, yeast, and bread crust. On the palate, it is full-bodied, intricate, and harmonious. This champagne boasts a delicate and enduring mousse, a vigorous acidity, and an exceptional finish.
Winemaking Process: In the winery, the grapes ferment with indigenous yeasts and minimal sulfite use, with 50% aged in stainless steel vats and the remaining 50% in oak barrels. Subsequently, the wine undergoes a secondary fermentation in the bottle, maturing for 30 months on lees.
