Grape Varietals & Region: 100% Sauvignon Blanc. The fruit is estate grown in vineyards planted back in 2003 in the clay-like limestone terroir of Aoura at 850 metres altitude from the Mediterranean sea.
Taste Profile: Aurora Cuvée N Sauvignon Blanc opens with a discrete nose of melon, grapefruit citrus and gooseberries. Fresh mouthfeel thanks to its crisp and vibrant acidity on the palate. Notes of yellow fruits and wet stones lead into a lingering mineral finish.
Winemaking Process: Careful selection and handpicking of the grapes in the beginning of September. Fermentation in chilled stainless steel tanks to maintain the natural fruit aromas. Filtering and bottling 4 months after harvest.
Open tank fermentation, lees stirring, pumping over and racking can all play a role during vinification, while oxidative aging in allows gradual air contact with the wine. Oak barrels & concrete tanks are most often used for such styles, and the more intense styles are often made under flor
