Description

Cota 45 UBE Paganilla 2021

Grape varietal & region: Cota 45 UBE Paganilla 2021 is a unique and intriguing wine that showcases the potential of the Paganilla grape variety. This wine is made by Cota 45, a small artisanal winery in Andalucía, Spain. The grapes are sourced from a single vineyard that is over 80 years old and planted on albariza soil, a type of soil that is rich in limestone and contributes to the wine's minerality.

Taste profile: On the palate, this wine has a lovely balance of acidity and minerality, with notes of citrus and green apple. It also has a distinctive nutty character, which is typical of Paganilla wines. This wine is a great match for seafood dishes such as ceviche or grilled shrimp.

Winemaking process: Winemaking for Cota 45 UBE Paganilla 2021 is done in a traditional way with minimal intervention. The grapes are hand-harvested and fermented with native yeasts in clay amphorae. The wine then undergoes aging for 9 months in the same amphorae, allowing it to develop a unique and complex flavor profile.
