Named for a single pago, not a grape — this is Palomino at its most site-specific.
Grape Varietals & Region: 100% Palomino from five small plots across three types of albariza soil (Lentejuelas, Lustrillos and Tosca Cerrada) in the pago of Paganilla, the most inland of the Atlantic-facing vineyard sites in the Marco de Jerez, Sanlúcar de Barrameda.
Taste Profile: A lovely balance of acidity and minerality, with notes of citrus and green apple alongside a distinctive nutty character typical of wines from this pago. Excellent with seafood dishes such as ceviche or grilled shrimp.
Winemaking Process: Made with minimal intervention: hand-harvested grapes are fermented with native yeasts in clay amphorae, where the wine also ages for 9 months, developing a complex, savoury flavour profile.
Winemaker: Cota 45 is the project of Ramiro Ibáñez, a Sanlúcar de Barrameda winemaker devoted to reviving traditional methods and expressing the specific terruño of the sherry triangle. He named the project for the 45-metre elevation he considers the sweet spot for the region's best albariza soils, and has stepped outside the official denomination of origin to pursue the fullest expression of terroir in his wines.

We hate the disappointment of opening an off-drinking bottle of wine – as much as a kid seeing their scoop of ice cream fall to the ground (Yes, it hurts).
Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
