Profile: Made in the traditional method (as in Champagne), Cap Classique wines show vibrant acidity, fine mousse, and a balance of fresh citrus and orchard fruit, with toasty, biscuity notes from lees aging. They range from crisp and youthful to richly matured vintage expressions.
Primary Grapes: Primarily using classic varietals such as Chardonnay, Pinot Noir, and sometimes Chenin Blanc for more local or creative blends
Aging Requirements: To be considered as a Cap Classique, the wine has to be made with the traditional Champagne Method. There is a minimum of 15 months on lees for non-vintage bottlings. Vintage & Prestige cuvees are typically aged 24–36+ months for more complexity
Terroir Influence: Coastal regions like Stellenbosch, Elgin, and Robertson provide cool-climate conditions ideal for sparkling wine – offering bright acidity and refined structure.
