Grüner Veltliner, Chardonnay and Zweigelt, aged over three years on lees and disgorged with absolutely nothing added.
Grape Varietals & Region: A traditional-method blend of Grüner Veltliner, Chardonnay and Zweigelt from Nikolaihof's biodynamically farmed Wachau vineyards, part of the UNESCO World Heritage Danube terrace landscape. Tirage from June 2021, disgorged November 2024 — over three years on lees before release.
Taste Profile: Ripe apple, apricot, bread crust and yeast on the nose, with red fruit, plum and wild herbs opening up with air. Juicy fruit, pronounced minerality, lively carbonation and a very long finish — zero dosage (0 g/L) means nothing's hiding the effect of that extended lees ageing. Good with umami-heavy food: miso salmon, mushroom risotto, aged hard cheese, oysters.
Winemaking Process: Méthode traditionnelle — secondary fermentation and over three years of lees ageing in bottle, disgorged with zero dosage. Fruit farmed biodynamically across the estate, in keeping with Nikolaihof's Demeter certification since 1971.
Winemaker: The Saahs family's decades-long biodynamic commitment extends to their sparkling wine too — this isn't a side project so much as proof that the same patient, low-intervention philosophy that built Nikolaihof's reputation on still Riesling works just as well with bubbles, given enough time on lees.

We hate the disappointment of opening an off-drinking bottle of wine – as much as a kid seeing their scoop of ice cream fall to the ground (Yes, it hurts).
Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
