Rice Polishing Ratio: 34%
Varietal: Kinmon-Nishiki
A new Japanese sake from a revived historic sake brewery. Brewed from the fresh mountain water of Kiso Valley that has long supported the town of Narai-juku, and locally produced rice from nearby Azumino, Nagano. Each bottle is carefully prepared through a small-lot production method unique to microbreweries.
Made with the Nagano original Sake rice varietal Kinmon-Nishiki which was developed roughly 70 years ago from cross breeding Yamadanishiki and the local Takane-Nishiki as a suitable and high quality sake rice for nagano rice cultivation.
