Junmai Daiginjo Sake
Junmai Daiginjo sake represents the highest level of precision and artistry in the world of sake brewing. "Junmai" signifies that the sake is made purely from rice, water, yeast, and koji, with no added alcohol, while "Daiginjo" indicates an even more exacting standard—using rice polished to at least 50% of its original size, and often even further for truly premium expressions.
This extreme polishing removes the outer layers of the rice grain, which contain proteins and fats, leaving behind the pure, starchy core. The result is a sake that is exceptionally light, aromatic, and refined. Junmai Daiginjo typically showcases elegant fragrances of melon, pear, peach, and sometimes delicate floral notes like jasmine or lily. On the palate, it offers a silky, weightless mouthfeel, crisp acidity, and a clean, lingering finish.
