Kimoto builds the yeast starter the slow, hands-on way — cultivating wild lactic bacteria over roughly a month instead of adding it — and it shows here as real backbone: Aiyama rice is usually prized for plush, round sweetness, but polished to a relatively low 70% and fermented kimoto-style, this leans into acidity instead, with the rice's richness held in check rather than let loose.
Kitajima Shuzo, based in Koka City, Shiga, brews on a small scale with no shortcuts and, in this bottling, no added commercial yeast — just the kimoto starter, wild bacteria and time.
Sweet and sour in the same mouthful, with a lingering, almost shimmering finish and enough weight (17% ABV) to stand up to rich, hearty Western food. For the seasoned umami-head rather than a first-timer.

We hate the disappointment of opening an off-drinking bottle of wine – as much as a kid seeing their scoop of ice cream fall to the ground (Yes, it hurts).
Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
