Sherry's grape, minus the fortification — a bone-dry, salty, unfussed Palomino from the edge of the Jerez triangle.
Grape Varietals & Region: 100% Palomino — the grape behind every bottle of Fino and Manzanilla — grown here as a still, table wine rather than fortified into sherry. The fruit comes from a steep slope of pure white albariza soil, the same chalky, water-retentive soil that defines the Sherry region, on the 500-hectare Hacienda La Parrilla estate in San José del Valle, about 35km inland from Jerez near the Sierra de Cádiz. El Pinto is a collaboration between natural wine importer Les Caves de Pyrène and the estate's owners, the Rebuelta González brothers, built around proving Palomino can stand on its own outside the sherry solera system.
Taste Profile: Bright golden yellow, with dried apple, yellow cherry and a touch of something exotic on the nose, chalky minerality running through the palate and a distinctly salty finish — that classic albariza character shining through without any fortification to hide behind. Great with olives, almonds, jamón, or anything you'd normally reach for a fino to pair with.
Winemaking Process: Farmed organically, uncertified, hand-harvested and whole-bunch pressed straight into stainless steel, where it ferments cool on indigenous yeasts and goes through natural malolactic conversion. Bottled unfiltered and unfined with only a small addition of SO2 — about as close as you can get to tasting raw Palomino before it becomes something else.
Winemaker: El Pinto is made at a converted 1881 olive mill on the Rebuelta González family's ranch, a genuinely old building repurposed for a genuinely new idea — taking the grape that's spent centuries disappearing into sherry blends and letting it make a simple, honest still wine instead. It's a low-key project, but a telling one: proof that albariza soil and old sherry-country vines don't need fortification to show what they're capable of.

We hate the disappointment of opening an off-drinking bottle of wine – as much as a kid seeing their scoop of ice cream fall to the ground (Yes, it hurts).
Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
