At the end of the fermentation and during the ageing on lees in bottle, the yeast gradually die. The phenomenon of Autolyse takes place; some microorganism are released, they interact with the wine and provide power and complexity. Autolyse cuvees, from selected plots and raised for a decade on lees, celebrates Time and its imprint on the wine.
Grape Varietals & Region: 86% Pinot Noir, 14% Chardonnay. 45 years old vineyard in Côte de Sézanne, Champagne, France. The vineyard is southeat facing, and have clay & chalk soils
Taste Profile: Complex and layered Champagne with aromas of hazelnuts, ginger, candied citrus, dried pineapple, spices, toast and roasted almonds. Very fine and integrated bubbles and an elegant yet concentrated interplay of dried fruit and toasty notes
Winemaking Process: Made using a base of 2008, and 12% of reserve wines. The wine is bottled and aged on lees for 14 years in the methode champenoise method, with alcoholic fermentation in stainless steel tank, before malolactic fermentation in bottle.
