A single-parcel natural pét-nat from Michael Cooper's Los Angeles project — Campo de Borja fruit, zero additions, bottled mid-ferment for its own bubbles.
Grape Varietals & Region: 100% Garnacha. Part of Michael Cooper's Los Angeles range, where every wine takes its name from a specific 'Paraje' — a named parcel — in the foothills of the extinct volcano Moncayo, Campo de Borja, Aragón. Rubiana is one such site; as with its Los Angeles siblings Cruz Alta and Romeroso, expect old, dry-farmed vines currently in organic conversion and tended with biodynamic preparations.
Taste Profile: A lively and expressive pétillant naturel made from Garnacha, offering freshness, energy and a fine, natural sparkle. Juicy and aromatic, with notes of strawberry, subtle spice and a hint of fennel, balanced by soft bubbles and a smooth, refreshing finish.
Winemaking Process: Made to 'Vins Méthode Nature' guidelines: organic fruit, hand-harvested, no inputs, no added sulphites. Destemmed and pressed for free-run juice, then bottled before primary fermentation finishes so the wine carbonates naturally in bottle — no dosage, no disgorgement, nothing added.
Winemaker: Michael Cooper, originally from Santa Barbara, California, has lived and made wine in Spain for over a decade, earning the nickname 'Vine Hunter' for his hunt across Aragón for high-altitude, old-vine, dry-farmed sites. It's in Campo de Borja that he built Los Angeles, his own project — named for the city where he studied and two grape-grower friends, both named Ángel, who gave him his start. His motto for the range: 'clean, pure, energetic.'

We hate the disappointment of opening an off-drinking bottle of wine – as much as a kid seeing their scoop of ice cream fall to the ground (Yes, it hurts).
Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
