Catena Zapata Cabernet Sauvignon 2019
Grape varietal & region: 91% Cabernet Sauvignon, 7% Cabernet Franc, 2% Petit Verdot. A blend of 4 vineyards - Agrelo, 950m (clay topsoil with rounded rocks at the bottom), Villa Bastías, 1,120m (silt loamy soil with limestone at the bottom), Altamira in La Consulta, 1,095m, (loamy soil with rounded rocks at the bottom) and El Cepillo, Eugenio Bustos 1,095m(loamy soil with rounded rocks at the bottom). The Catena wines are special assemblage of High Mountain Estate Vineyards made by fourth-generation vintner, Laura Catena and chief winemaker, Alejandro Vigil. Although the wines are mostly consumed shortly after release, they also age beautifully for 10 to 20 years.
Taste profile: The wine has a dark ruby colour with violet tones. It offers intense aroma of ripe raspberries and cassis with pepper notes, cloves, and a touch of cedar. It is full-bodied and rich and displays layers of black currant and black raspberry with notes of cedar and oregano on the palate. This bottle of Red is an elegant wine with silky tannins that provide structure and a long, persistent finish.
Winemaking process: Fermentation was done in stainless steel tanks for 14 days and post-fermentation maceration for 20-23 days. Wild yeasts were used and 12 months aging in barrel.
