Grape Varietals & Region: 100% Pinot Noir from Willamette Valley, US. Hand-crafted from their favorite 3 Dijon clones, 115, 777, and 828.
Taste Profile: Striking, with its medium garnet color and violet hue. Focused aromas of wild strawberry, red licorice, and Bing cherry are featured on the nose, while subtle flavors of violet and spice emerge on the palate. Round, silky tannins create a seamless texture that persists throughout the surprisingly long finish.
Winemaking Process: The clusters were sorted and destemmed gently, followed by 3 days of cold soaking. We pumped over daily as fermentation progressed, maintaining cool temperatures to capture maximum aromatic complexity. The new wine was aged in stainless steel and neutral French oak barrels, resulting in this singular expression of Pinot Noir.
