Grape Varietals & Region: 80% Corvina Veronese, 20% Rondinella from the Valpolicella Classica, Tenuta Novare Estate in Arbizzano di Negrar, Veneto, Italy
Taste Profile: Intense red color with hints of garnet. On the nose, typical notes of plum, cherry and Morello cherry followed by tea leaves, licorice and spices. On the palate, notes of red berry fruit sweetened by soft notes of spices, in perfect balance with acidity.
Winemaking Process: The fruit undergoes appassimento, and is then macerated & aged for 7 years in Slavonian oak barrels. It is then bottled aged for at least 8 months before release
From Barolo to Bordeaux, these wines are steeped in tradition. The style covers a broad spectrum of flavor profiles, but tend to be elegant and structured and can be cellared for a long time.
These wines often have savoury tones of earth, bell pepper, tobacco, cassis, and are often medium to full bodied, with long finish & structured palattes
