Eugenio Collavini Spumante "Il Grigio" NV
Born in 1971 as perhaps the first Martinotti-method sparkling wine in Friuli's history.
Grape Varietals & Region: A blend of 80% Chardonnay and 20% Pinot Grigio grown in the Friuli-Venezia Giulia region of northeastern Italy, known for its cool climate and diverse terroir.
Taste Profile: Crisp and refreshing, with lively acidity and vibrant fruit — green apple, citrus and delicate floral notes. Fine, persistent bubbles build a creamy mousse.
Winemaking Process: Grapes are gently pressed and fermented at controlled temperature, then undergo a secondary fermentation in stainless steel using the Charmat method. Six months of ageing on the lees in horizontal tanks, followed by at least three months' rest in bottle, give Il Grigio its finesse.
Winemaker: Eugenio Collavini founded the winery in 1896 in Ravignano, Friuli, supplying a few hundred litres of wine to local stores. His son Giovanni carried the estate through two world wars, and his son Manlio took the reins next — in 1971, Manlio blended Pinot Grigio and Chardonnay using what became known as the Collavini Method, creating Il Grigio as one of the region's first sparkling wines. Today the fourth generation, Giovanni, Luigi and Eugenio, oversees more than 170 hectares across Friuli's Collio and Colli Orientali.

We hate the disappointment of opening an off-drinking bottle of wine – as much as a kid seeing their scoop of ice cream fall to the ground (Yes, it hurts).
Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
