Taste Profile: Straw yellow with intense golden reflections, strong hints of vanilla, honey, broom flowers and ripe yellow peach. Elegance and persistence on the palate are completed by extraordinary complexity and flavor
Winemaking Process: The grapes harvested manually in small boxes are quickly taken to the cellar where they are subjected to manual selection on the belt. Destemmed and lightly pressed, they arrive at the press where they are softly pressed. The must obtained is left to ferment, without any temperature control, in 225 liter acacia barriques. Once fermentation is complete, the wine obtained rests on the fine lees for approximately eight months, followed by 6 months in bottle.
Succulent stonefruit with a citrus backbone characterises these wines. Typically, they have notes of tropical fruit, and come from warmer climates. A touch of oak during the winemaking process also helps to give some softness to the wine.
