Teruaki Hashimoto is committed to local agriculture, taking whatever rice the farmers grow and adjusting his methods to bring out the best in it. He works only with indigenous yeasts and for the Natural Selection project, omitted temperature control altogether, allowing natural fermentation to express the Yoshino terroir.
Sweet and acidic with full bodied texture and a avour prole that suggests ripe and juicy Kyoho grapes.
