The Hermit Ram Salty White 2023
A former ecologist decided the best way to become a better winemaker was to stop relying on inputs almost entirely.
Grape Varietals & Region: 100% Sauvignon Blanc from Waipara, North Canterbury — winemaker Theo Coles calls it an ode to the New Zealand coastline. Coles works old vines and ancient limestone soils across the hills of Canterbury with a deliberately low-intervention hand.
Taste Profile: Salty, as the name promises, but genuinely complex: light florals of meadow flowers and jasmine mingle with green herbs, lemon curd and a whiff of lychee. The saline, crunchy, mid-weight palate has prominent acidity, orange peel character and a subtle savoury nuttiness. Super fun to drink.
Winemaking Process: The fruit is split across three different treatments — some ferments and ages as whole bunch in stainless steel, some ferments and ages in Spanish amphorae, and some fills neutral barrels left un-topped to develop a layer of flor yeast, the same technique used for Fino Sherry and Jura's Vin Jaune.
Winemaker: Theo Coles founded The Hermit Ram in 2012, working alongside grower Gareth Renowden on a handful of barrels of Pinot Noir from the limestone-dominated Limestone Hills vineyard in the Waipara Gorge. An ex-ecologist, Coles was drawn to natural winemaking to test whether he could make better, more interesting wine without leaning on inputs. The name comes from an etching of a defiant, solo ram he'd bought a decade earlier — the range has since grown to include Müller-Thurgau, Sauvignon Blanc and Pinot Gris from sites across Canterbury, even as he's deliberately scaled production down in pursuit of quality over volume.

We hate the disappointment of opening an off-drinking bottle of wine – as much as a kid seeing their scoop of ice cream fall to the ground (Yes, it hurts).
Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
