This wine keeps changing blend and color and this year surprises us with blend of white grapes, direct-pressed, which result in a crispy and delicate white, with white flower and peach blossom.
Spontaneous fermentation. Unfined/Unfiltered. Low to no added SO2.
Taste Profile: The wine is fruity and refreshing bright acidity. It is a perfect wine for celebrating and enjoying with friends, or to pair with appetizers, salads, or desserts.
Winemaking Process: Chenin Blanc and Riesling are left to have skin-contact for one night. The grapes are co-fermented, then aged in stainless tanks. Zero Additives.

Also known as Petillant Naturel, it's the oldest version of sparkling wine making, and involves bottling the wine before fermentation has finished. A single fermentation is applied, trapping carbon dioxide to create natural carbonation.
This results in a little less control, and wines can sometimes come across a less refined compare to the traditional champagne method, and sometimes tends to have a slightly more beer-ish or cider-ish taste
