Rogue barrels, rebellious personalities, and one deliciously indulgent result — Burgundy-inspired but proudly Adelaide Hills.
Grape Varietals & Region: Predominantly Chardonnay with small additions of complementary white varieties from the Adelaide Hills, South Australia. Carte Blanche literally means "white map" — a tabula rasa on which to chart whatever journey moves the spirit. The wine begins with Chardonnay barrels that don't fit the single-vineyard profile — rogue outliers with rebellious personalities. Every year, Brendon gives himself the creative freedom to compose a wine that's less about terroir and more about the process, with the remainder of the blend made up of Riesling, Pinot Gris, Grüner Veltliner, and some unrevealed secrets
Taste Profile: There's a warmth to this one that feels like walking into a kitchen where something's been baking for hours. First hit is quince and sourdough starter — complex, alive. Then a full-body hug of baked rhubarb crumble. Juicy in all the right places — nectarine, guava — like biting into something you should probably share (but may decide not to). Lifted, floral, and super accessible. On the palate, sweet-pickled ginger, a lemongrass spiciness to keep you guessing, and the umami of oyster shells. There's something indulgent about this wine but nothing precious — it overdelivers in the best way. Pair with soft-rind cheese, roast chicken, or shellfish
Winemaking Process: Lees from other fermentations are added to promote a rich, textural profile. A zesty blend characterised by zippy acidity, French oak influence, and a slightly oxidative profile. The wine is bottled unfined and unfiltered with minimal SO2 additions — true to the BK house approach of maximum quality through minimal intervention

We hate the disappointment of opening an off-drinking bottle of wine – as much as a kid seeing their scoop of ice cream fall to the ground (Yes, it hurts).
Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
