A single selected butt, born from decades of the cellar's quiet habit of collecting.
Grape Varietals & Region: 100% Pedro Ximénez from Montilla-Moriles, Andalucía, vinified in the Palo Cortado style — a rare, in-between sherry-family classification that begins life like a fino, ages under flor, then loses that protective veil early and finishes its ageing oxidatively, gaining the richness of an Oloroso while keeping the freshness and cut of an Amontillado.
Taste Profile: Amber-mahogany in the glass. Concentrated, preserved citrus and stone fruit meet toasted, nutty complexity typical of extended oxidative ageing, with notes of sweet spice, wood and a faint smokiness. Dry, textured and long, balancing richness with real cut.
Winemaking Process: This Palo Cortado is a single selected butt drawn from the many ageing in the Toro Albalá cellars, chosen by Antonio Sánchez for having all the hallmarks of a great Palo Cortado — reflecting the character of the house as a whole.
Winemaker: José María Toro Albalá founded the winery in 1922 in the heart of Montilla-Moriles, building on family winemaking roots that reach back to 1844. Today the cellar is tended by winemaker and enologist Antonio Sánchez, who has devoted his career to the Pedro Ximénez grape — treating each parcel, as he puts it, as if it were his own offspring. The Centenario range reflects decades of Antonio and his team's care: the Amontillado and Pedro Ximénez in the series were originally selected purely for personal enjoyment, opened only during Holy Week with friends and family, until Antonio decided it was time to share them with the world.

We hate the disappointment of opening an off-drinking bottle of wine – as much as a kid seeing their scoop of ice cream fall to the ground (Yes, it hurts).
Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
