A richer Fino, which undergoes some years of oxidative ageing as the flor weakens.
Grape Varietals & Region: 100% Pedro Ximénez from Montilla-Moriles, Spain — unlike Jerez, where Fino is made from Palomino, Montilla-Moriles' warmer climate lets PX itself be fermented dry and aged biologically under flor for a fino-style wine.
Taste Profile: Old gold with copper and greenish reflections. An intense, piercing aroma: the biological ageing brings almond and yeast notes, merging with hazelnut and toasted aromas from oxidative ageing. Dry and enveloping on entry, with mineral and saline sensations — a complex, elegant wine.
Winemaking Process: This wine is the product of 15 years' biological ageing through the criaderas and solera system. In its later years the veil of flor begins to weaken, at which point oxidative ageing takes over, adding richness, complexity and elegance.
Winemaker: José María Toro Albalá founded the winery in 1922 in the heart of Montilla-Moriles, building on family winemaking roots that reach back to 1844. Today the cellar is tended by winemaker and enologist Antonio Sánchez, who has devoted his career to the Pedro Ximénez grape — treating each parcel, as he puts it, as if it were his own offspring, grown under the best conditions and destined for the world's finest tables.

We hate the disappointment of opening an off-drinking bottle of wine – as much as a kid seeing their scoop of ice cream fall to the ground (Yes, it hurts).
Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
