A small grower's idea to just start hoarding old wine became one of Montilla-Moriles' great sherry-style treasuries.
Grape Varietals & Region: 100% Pedro Ximénez, 30% from Toro Albalá's own vineyards and 70% from partner growers across Montilla-Moriles, Andalucía, Spain.
Taste Profile: A suggestion of sweetness and a velvety texture. Amber with copper reflections, and a noble, elegant nose of sweet caramel, tobacco spice, roasted nuts and candied orange peel. Dry and voluminous on entry, with an intense palate that seems to reminisce over decades in old wood — raisin, tobacco and warm woody notes mingling with orange peel and hazelnut.
Winemaking Process: Ages via the traditional "crianza" system, losing its protective veil of flor early on before beginning oxidative ageing for around 25 years in old barrels — the slow process that gives Palo Cortado its particular blend of Fino-like structure and Oloroso-like richness.
Winemaker: Toro Albalá began in 1922 in the heart of southern Córdoba, when grower José María Toro Albalá had the idea of setting aside aged wines to build a treasury for the most demanding palates — a philosophy the family still holds to today. Winemaker and enologist Antonio Sánchez has spent his career applying that same patience, treating the estate's Pedro Ximénez grapes, in his words, "as if they were his own offspring," grown under conditions built to give the wine real character.

Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
