Daiginjo Sake
Daiginjo is the pinnacle of Japanese sake craftsmanship. It uses rice polished down to 50% or less of its original size, resulting in an exceptionally clean, fragrant, and complex profile.
Daiginjo allows for a small amount of distilled brewer's alcohol to be added, which can make the aroma even more pronounced. Best paired with light, refined dishes like sashimi, steamed vegetables, or lightly flavored seafood
