Yamahai is a slow, labour-intensive brewing method that builds the lactic acid needed for fermentation naturally, from wild bacteria in the brewery, rather than adding it directly — a more unpredictable process that tends to produce sake with extra depth, acidity and character.
Yukawa Shuzo is the second-oldest active sake brewery in Nagano, founded in 1650 and still run by the same family more than 370 years later. The brewery sits 1,000 metres up in the mountains, in the old post town of Yabuhara-juku. The 16th-generation brewery president, Naoko Yukawa, runs the kura today alongside her husband and toji (master brewer) Shinichi, and together they've pushed further into labour-intensive methods like Kimoto and Yamahai to coax extra flavour and resilience from their yeast. "16th Kuroemon" is the newer of the brewery's two labels, built specifically around that drive to innovate.
Light-bodied, fresh and fruity, with the ample acidity that Yamahai brewing is known for — a gentle, approachable way into a very old brewing tradition.

Sake is brewed using only rice, water, yeast and koji. There are no other additives. To qualify as a Junmai, there is technically no minimum milling requirement, but the sake must be the “pure rice” style… no added distilled alcohol allowed

We hate the disappointment of opening an off-drinking bottle of wine – as much as a kid seeing their scoop of ice cream fall to the ground (Yes, it hurts).
Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
