A dark, bubbly, extremely small-batch pét-nat from Karasakız, one of Turkey's oldest indigenous red grapes.
Grape Varietals & Region: Karasakız, an ancient indigenous red variety Paşaeli has made something of a house specialty, from old bush vines grown high in the Kaz Dağları (Mount Ida) in Turkey's Aegean region. Paşaeli — founded in 2000 by brothers Seyit and Gino Karagözoğlu, originally fine-wine importers before they turned to their own production — built the winery around exactly this kind of project: championing indigenous grapes that had been sidelined in favour of international varieties.
Taste Profile: Deep, dark red in the glass with a gentle fizz. Black cherry and cassis up front, laced with laurel, violet and drier woody herb notes; on the palate it turns toward balsamic, candied violet and cooked plum, finishing with a pleasantly bitter snap. Not a wine that plays it safe — pour it slightly chilled and expect questions from the table.
Winemaking Process: Made pétillant naturel — after around 11 days of skin maceration, the base wine begins fermentation in steel tank and finishes in bottle, trapping the CO2 for a natural sparkle with no dosage or secondary intervention. Extremely limited production, consistent with Paşaeli's small-lot, single-vineyard approach across their old-vine range.
Winemaker: Seyit Karagözoğlu founded Paşaeli in 2000 with his brother Gino, turning a background in fine-wine importing into a mission to rescue Turkey's disappearing native grapes — Karasakız, Kolorko, Yapıncak, Sıdalan — from decades of being farmed for the table or blended away. The winery's approach leans almost entirely on spontaneous fermentation with native yeasts, letting each old-vine site speak with as little interference as possible.

We hate the disappointment of opening an off-drinking bottle of wine – as much as a kid seeing their scoop of ice cream fall to the ground (Yes, it hurts).
Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
