Miles Mossop Chapter Four 2022

Grape Varietals & Region: 100% Sauvignon Blanc from a single 36-year-old bush vine vineyard in the Stellenbosch region growing on decomposed shale soils

Taste Profile: This wine displays a brilliant deep straw colour. On the nose fragrant lemongrass, cassis leaf and passionfruit aromas emanate from the glass underpinned by hints of dry straw and notes of fresh brioche. There is a great intensity on the entry of the palate with flavours of quince jelly, guava and lemongrass on the mid-palate with hints of toasted almonds and a velvety creaminess. This all leads to a textured pithy finish with a stunning length and a freshness reminiscent of oyster shell.

Winemaking Process: Whole bunch pressed and the juice settled overnight before being taken to 400L old French oak barrels for fermentation. Matured sur-lie for 10 months with regular lees stirring.
