Description
Kopke Dry White Port NV
Kopke Dry White Port has a fresh and aromatic style. Crystalline citrine colour with straw tones. Opens with an exuberant nose of tropical fruits and attractive floral notes. A rich and balanced wine that is smooth in taste, dry, with a great structure and a stupendous balance.
These traditional Duoro grape varieties grow at 600 metres above sea level in schist-sandstone (greywacke) interspersed with granite in some places. The rows of vines are traditionally planted across the slope in horizontal terraces. More recently, vines have been planted up the slope (called “vinha ao alto”, meaning vertically planted).
Hand-picking of the fruit at the optimum time. Slight maceration with extraction of colour and aromas of the pellicles, complemented by the pressing of the grapes before fermentation. This occurs slowly in a running-off process in stainless-steel vats, under low and controlled temperatures between 16–18ºC. The fermentation is interrupted by the adding of grape brandy to create a fortified wine. The wine ages in stainless steel and wood for a minimum of 3 years.
