José Pariente Verdejo 2021
José Pariente Verdejo is the flagship wine of Bodegas José Pariente. The freshest, most elegant and authentic expression of their native variety.
100% Verdejo from 30-year-old vineyards and a selection of old vines. The vineyard is located in the highlands of the Duero River and planted in rocky soils. This area is very poor in organic matter and has a harsh and variable continental climate, typical of the Valladolid province. The hand harvest is done at night, taking advantage of low temperatures to help preserve the flavour of the grapes. Cold maceration lasts for 8–12 hours before pneumatic pressing. The must ferments in stainless steel tanks at low temperature. After fermentation the wine matures on its lees over 4 months. Finally, the wine goes through filtration and bottling.
