El Grillo y La Luna 12 Lunas Blanco 2018
El Grillo y La Luna 12 Lunas Blanco is incredibly elegant due to its combination of Chardonnay and Gewürztraminer varieties. Lemon yellow colour. The nose opens with intense aromas of peaches in syrup and pineapple. The silky palate is very fragrant and full-bodied with an oily texture, fresh acidity and saline mineral finish.
90% Chardonnay and 10% Gewürztraminer. The fruit comes from El Grillo y La luna's 53 hectares in the Somontano DO, Aragón. The vineyard terrain of the Somontano Designation of Origin has three distinct zones: the sierras, the Somontano and the plains. Somontano's climate has cold winters and hot summers with significant temperature changes at the end of spring and autumn.
Harvesting of the grape varieties separately once they have reached optimum ripeness. Light crushing and soft pressing of the fruit, then the must is left to clarify by gravity for 48 hours to remove the thick lees and seeds (this helps to avoid an herbaceous aroma). Alcoholic fermentation in stainless steel tanks at a temperature of 14–17ºC for approximately 2 weeks. Blending both varieties once fermentation is complete. The wine ages on lees for 4 months in stainless steel tanks at 12ºC. One month before bottling, weekly batonnage is halted and the wine is left to clarify by gravity.
