Domaine Guillemard Clerc Puligny-Montrachet La Rue aux Vaches
This beautiful bottle of Chardonnay has a lovely pale yellow. It opens up to a beautiful nose of apples and pears. On the mouth, it has a mineral body with refreshing acidity and hints of lemon and honey.
The grapes are picked manually and transported to the press in openwork boxes. The vinification is done according to very specific specifications defining the traditional method also called the Champagne method. Chardonnay is used to make Blancs de Blancs.
On arrival in the cellars, the white grapes are pressed immediately to avoid any risk of maceration and oxidation. The juice obtained is decanted and then put into oak barrels (1/5th of which are new Allier barrels) where it will be aged for 9 months. The wine will be battoné during the first months, and ouille regularly until its rackings and assemblies, before the bottling.Â
