Grape Varietals & Region: 100% Chardonnay from Morgeot, the largest premier cru climat in the Chassagne-Montrachet appellation at the foot of the hillside. Clay-limestone soil. The vines do not belong to the estate, and comes from their trade selection
Taste Profile: Brilliant pale gold color. A distinguished nose combining white fruit, lime blossom and mineral notes, with vanilla oak in the background. Beautifully taut, concentrated and sapid on the palate, still rather timid in its expression. Delicious roundness, fullness, precision, a convincing modern style
Winemaking Process: Hand-picked grapes only. The whole bunches are pressed in a pneumatic press. The grape juice is then cold-settled before being gravity-filled within 48 hours. Alcoholic fermentation takes place entirely in barrels, using indigenous yeasts. The wine ages in French oak for 10 months, undergoing regular lees stirring
Full-bodied fruit and spice, often with the ability to age. This style usually relies on new oak to impart vanilla driven characteristics. Malolactic fermentation & on lees ageing also contributes to the texture
