Grape Varietals & Region: 60% Monastrell & 40% Garnacha Fina from Bullas in Murcia, Spain. The Mediterranean climate is influenced by the altitude of the area, with short but harsh winters with episodes of snow and hot summers during the day and cool at night, a factor that positively favours the quality of the grapes. The vineyard is located at an altitude of about 600-900m above sea level, with bush formation on light, loamy soils with good drainage. At the foot of the Sierra de las Cabras, there is abundant flora and fauna that favours the incorporation of nutrients and also yeasts that will intervene in the winemaking process.
Taste Profile: Cherry red with a violet rim, very clean. The red and black fruits stand out against a smoky and spicy background, very attractive. Fresh and fluid on the palate, with a combination that invites you to drink with flavours of Mediterranean fruit, balsamic and aromatic herbs.
Winemaking Process: The production is very traditional and destemmed grapes are mixed with whole bunches at 30%. Fermentation in ash stone tanks from a quarry near the winery. Short maceration, 8 days. After pressing, the wine is transferred to French oak foudres where the alcoholic fermentation ends and malolactic fermentation takes place. Aged in French oak barrels for 12 months. After a slight clarification, it is bottled unfiltered.
