Grape Varietals & Region: 100% Monastrell from Bullas in Murcia, Spain. The fruit comes from their 10-year-old bush-shaped vineyards located in the Caravaca de la Cruz area at about 850 metres above sea level. Clay-silty soil structure and mostly limestone composition
Taste Profile: A nose that will captivate you, sweet with notes of caramel, pastries and a menthol base. Smooth, fine and elegant entry.
Winemaking Process: The production is very traditional and 50% of destemmed grapes are mixed with whole bunches. Fermentation in limestone tanks from a quarry near the winery. Short maceration, 6 days. After pressing, the wine is transferred to French oak casks where it completes alcoholic fermentation and undergoes malolactic fermentation. It is aged in French oak barrels for 4 months and 2 months in cement tanks.
