Miho Fujita gave up a career in Tokyo to rescue her family's brewery. She hired star toji Toshiaki Yokomichi to lead the brewing, but aer years by his side, learning from the master, she took the lead with this sake, using rice from an esteemed farmer in Shiga.
Ripe and juicy with notes of grapefruit, mild pleasing astringency. Complex yet dry and crisp. A verstatile sake for pairing with proteins.
