Grape Varietals & Region: 60% Chardonnay, 40% Pinot Noir from 18 to 30 year old vines grown on loess & clay soils. Their vineyard is in Velké Bílovice, the largest wine village in Czech Republic
Taste Profile: Expect an elegant yet complex wine, with a fantastic perlage. Apple, kiwi, pear, honey, citrus fruit, brioche. There’s a lot going on in this wine and it’s beautiful to see how it opens up with more air.
Winemaking Process: Harvest by hand, followed by pneumatic pressing of whole grapes. Spontaneous fermentation & ageing in stainless steel tanks, followed by method champenoise bottle ageing, and is matured on lees for 36 months
