Grape Varietals & Region: Chardonnay from Ontario, Canada. This is a perfect blend of Chardonnay grown in two different vineyards. The grapes from Grimsby Hillside Vineyard come from 3 separate blocks across 90 acres.
Taste Profile: Aromas of white peach and grilled pineapple are followed by hints of spice like cardamom and sea salt. There is a beautiful creamy richness on the palate along with wet stone, grilled pineapple, warmed pine nuts, and hints of flint.
Winemaking Process:
Hand-picked and hand-sorted, the grapes were whole-cluster pressed and kept separate. The juice was allowed to settle prior to being racked to French oak barrels (25% new; 75% old) for fermentation by way of indigenous yeast and malolactic bacteria. Aged for 10 months, then bottled.
Succulent stonefruit with a citrus backbone characterises these wines. Typically, they have notes of tropical fruit, and come from warmer climates. A touch of oak during the winemaking process also helps to give some softness to the wine.
