Raisi-Bulle is made of 99% pure grape juice and 1% bubbles by adding CO2.
The harvest takes place, depending on the year, between the end of September and the beginning of October. The grapes, harvested at perfect maturity, are pressed within the hour. Then the grape juice is quickly cooled to avoid any fermentation. Just before bottling, the juice is carbonated. It is then pasteurized (at 70°C for a few seconds) in order to preserve the maximum of the aromas of the grapes.
There are 3 main ways in which non-alcoholic wine can be made. This is through either vacuum distillation, spinning cone column or reverse osmosis
In vaccum distillation, the wine is heated to boil off the alcohol. It is usually then blended with grape juice to make up the loss of flavours during this process. For reverse osmosis, pressure forces the wine through a membrane, which separates the wine from water and alcohol. The water is boiled off and added back to the concentrate. Spinning Cone Column is considered the most effective in retaining flavour, using centrifugal force and vacuum distillation to separate alcohol while keeping the wine’s delicate flavors
