Taste Profile: The Nikolaihof Chardonnay is a medium-bodied wine that is characterized by its complex aromas. The bouquet features notes of fresh nuts, apples, pears and quinces, while fresh almonds and white flowers are added on the palate. A special appeal of this Chardonnay is that it is aged without any hint of wood, which gives it a fresh and lively aroma.
Winemaking Process: The grapes are harvested by hand. wine is fermented on the grapes own, natural yeasts. 6 months of maturation in a big, old oak cask

Aging a wine on lees (sur lie) significantly affects its taste, texture, and overall complexity. Lees refer to the dead yeast cells and other solid particles that settle at the bottom of a fermentation vessel after primary fermentation.
It helps with flavour development, often adding bready, nutty, toasty, or creamy flavors. It also helps to balance acidity & creates a more rounded, creamy, and silky mouthfeel.
