Il Canovino Soave classico is a complex and outstanding Soave. Straw yellow colour with greenish reflections. Appealing and harmonious bouquet of peaches, orange zest and honey. The dry and full-bodied palate is very balanced with a juicy acidity, plenty of finesse and elegance. The aromas follow through to the palate, where it meets with a preserved lemon presence, saline minerality and a characteristic almond aftertaste on the finish.
100% Garganega. The organically grown grapes come from Il Canovino's vineyards in the heart of the Soave Classico area. The vines are planted in calcareous soils, enjoy a southern exposure, and grow at 200–250 metres altitude.
Handpicking and selection of the fruit.
After pressing, a short cold maceration follows. Fermentation takes place after decanting of the must at a controlled temperature of 15–16°C.
Alcoholic fermentation in steel vats. The wine ages for 2 months in 500L wooden casks, and continues in bottle.
Succulent stonefruit with a citrus backbone characterises these wines. Typically, they have notes of tropical fruit, and come from warmer climates. A touch of oak during the winemaking process also helps to give some softness to the wine.
