Compared to typical Chinon wines, this Cabernet Franc is particularly rich in vibrant fruit due to its Eastern Mediterranean location and relatively higher sun exposure.
Taste Profile: Aurora Cabernet Franc is a wine with altitude. Deep ruby colour. Raspberry and red cherry nose that extends into a gratifying mid-palate of toasted walnuts and caramel notes. Velvety mouthfeel with soft tannins and a long, lasting complex finish.
Winemaking Process: Careful handpicking of the grapes in the beginning of September. Following the initial fermentation, the wine ages in oak barrels (30% new and mainly American with a few French) for 12 months before bottling.
