Taste Profile: Lifted aromatics of lemongrass, sea spray and oyster shell precede a lemon citrus mosaic of sorbet and sherbet. The backbone of acidity carries freshness and minerality on the length with a hint of lanolin adding further complexity
Winemaking Process: Fermented in the natural way by indigenous yeasts this hand harvested Semillon fruit is made without the use of additions or added preservatives. It has been bottled without the use of filtering, fining agents or unnecessary stabilisations and may show signs of natural sediment.
From the limestone character of Sancerre to the green, herbaceous Sauvignon Blanc of Marlborough, this style group often shows off cut grass and wet stone. Often associated with coastal regions or limestone based terroir, these wines are characterised with crisp acidity, mineraiity, citrus tones, with a hint of grassiness
