Junmai Ginjo Sake
Junmai Ginjo sake represents a beautiful balance between purity and finesse. Like all Junmai styles, it is brewed with only rice, water, yeast, and koji mold, with no added alcohol. What sets Junmai Ginjo apart is the precision and artistry involved: the rice must be polished down to at least 60% of its original size, removing outer layers to reveal the starchy heart, which results in a more refined and aromatic brew.
