Grape Varietals & Region: 10% Shiraz from various blocks on the Forest Hill Vyneard property in Mount Barker of Western Australia.
Taste Profile: Lifted aromas of blue fruits with florals and classic Mount Barker spice. Medium bodied but dense with fine ripe tannin and well balanced natural acidity.
Winemaking Process: The fruit was picked then de-stemmed/crushed into 8-tonne open fermenters and inoculated. The fermenters were pumped over with aeration twice a day; temperature was held around 25 °C. The wine was then pressed to Burgundian barriques for malolactic fermentation, allowing a soft integration of the grape and oak tannins. The wine was blended, fined with egg whites and bottled after 18 months maturation.
Powerful modern reds with the ability to age. They tend to be very intense, with ripe fruit, firm tannins & drinkability either young or cellared.
They often have notes of forest floor, blackcurrant, mint & eucalyptus
