Winemaking Process: This Crémant is made from 80% Pinot Blanc and 20% Auxerrois grapes, including 25-30% reserve wines. The grapes are harvested exclusively by hand. This Crémant is made in the purest respect for traditional methods, with a second fermentation in the bottle, followed by at least 12 months’ ageing on laths. A dosage of 8.5g/l at disgorgement gives it its brut character.
