Le Cantine del Cardinale "Visciolata" 2015
An 18th-century family recipe for turning sour cherries and wine into something between a dessert and a fortified red — resurrected by a man who just wanted to taste what his ancestors tasted.
Grape Varietals & Region: A base of Montepulciano and Sangiovese, infused with sour cherries (visciole) and sugar — less a single-varietal wine than a recipe, in the tradition of Marche's historic vino di visciole.
Taste Profile: Ripe sour cherries, macerated with sugar in the sun in stainless steel barrels from June to September, produce an aromatic nectar that's then worked together with the Montepulciano and Sangiovese must for around 12 months, following a recipe handed down for generations. The result sits somewhere between a dessert wine and a cherry liqueur — sweet, dense and deeply fruited.
Winemaking Process: Cherries are picked and mixed with sugar, then left to ferment. During the grape harvest, the cherries are drained and the resulting liquid is fermented together with the red wine must. Once fermentation is complete, the cherry juice is added back in, and the wine is left to age for a further 6 months.
Winemaker: Le Cantine del Cardinale was founded around 15 years ago in Serra de' Conti, a small hill town in the Marche. The Visciolata recipe itself is much older — recovered by Giovanni Cardinali from a nineteenth-century family recipe for "vino di visciole," a sour cherry wine Marche households once made to soften the robust reds of the Castelli di Jesi. Giovanni started making it for relatives and friends, and it was they who first started calling it Visciolata del Cardinale. Today the business is a family affair, run by Giovanni, Giselle, Luca and Cristiano.

We hate the disappointment of opening an off-drinking bottle of wine – as much as a kid seeing their scoop of ice cream fall to the ground (Yes, it hurts).
Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
